Monday’s Mouthful – Easy Baked Sweet Potato Fries!

Annnnnd we’re back – with sweet potato fries! As you may have heard (read?) I am without internet in France at the moment with no clear idea as to when that will be remedied (yay for pre-scheduling posts). This resulted in a short break to regroup after last month’s blogging challenge. It was great to remind ourselves that we can do anything as long as we set aside the time to make it a priority.

thumb_IMG_4540_1024Sweet potato fries are just about the easiest thing to make. They are also super delicious. C and I both love this recipe and it features regularly in our weekly menu planning. Feel free to add more sweet potatoes/spices/herbs… my favourite combination is the cumin with oregano but the options are limitless when it comes to flavouring your sweet potatoes. The same goes for the curried mayonnaise to pair with them. Curry and cinnamon are a match made in mayo heaven that I made once by accident (didn’t mean to reach for the cinnamon!) and now its the only thing I eat with my sweet potato fries!

Ingredients

Curry Mayonnaise
Instructions
Fries
  1. Preheat oven to 375F (190C) Cut sweet potatoes into fries. Toss with oil and sprinkle with cumin and oregano. Season to taste.
  2. Bake for 30-40 minutes, or until cooked through. Serve with mayo.
Curry Mayo
  1. Stir together all ingredients. Serve with sweet potato fries.
