It is Sunday night and I am trying to get myself ready for my review week at school before my exam. The problem is my brain is still on a high from such a perfect Saturday in Paris! I usually head back to Belgium after school on Friday’s however this week the trains weren’t running as usual. Instead of going home, C drove here on Friday afternoon to spend the weekend in France and Saturday in Paris.

It’s almost the end of July (and our July Blogging Challenge). So far we’ve worked hard to post everyday but yesterday, for the first time I missed a day of posting. Instead of writing, after school I took off into Paris with some friends and we spent a lovely evening eating and drinking (and dancing) in a park. It was a perfect summer night that inspired this list of all of the best things about summer!

Depending where in the world you are you may or may not know that the European Cup has been happening in France with the finals happening on Sunday night. It feels like just yesterday that school was starting and it’s hard to imagine that we’ve only got three weeks of classes left before review and exam. I survived my first two weeks of pastry school! Week one was an introduction to the school and Maison Lenôtre, as well as a visit to the largest food market in the world in Rungis, and seeing the kitchen of the Pré Catelan, the 3 Michelin Star restaurant run by Chef Frédéric Anton, MOF (Best Craftsman of France). Week two was all in the kitchen, we made eclairs, chocolate tarts, apricot tarts, apple pastries, and an almond puff pastry called Pithivier. I Live With Chickens. Sort Of.

So I moved to France (as I sit in Belgium writing this post)

C and I left our home in Geraardsbergen, Belgium, yesterday (Friday) afternoon to drive to my apartment in Plaisir, a 20 minute train ride from Paris. The typically 3 hour drive took close to 4 hours between cars driving the wrong way on the highways (I thought I was back in Saudi!) and the traffic around the outside of Paris.

In exactly three weeks from today I will be waking up on a plane landing in Brussels. While always exciting, this is not a new experience. Except that this time I don’t have a return ticket because I am moving to Europe. (Standby freakout. Freakout go.)

Visa Applications Suck.

Visa applications are confusing, exhausting, confusing again, and basically just stupid. People should be able to go wherever they want whenever they want and that’s that.

Obviously I know that is not reality.
