I’m not entirely sure what to call this. I think the original recipe was for a type of lasagna – and included meat. My version has evolved into a vegetarian stuffed pasta made with butternut squash, spinach, and feta. This is a fairly simple recipe to follow and keeps well in the freezer.
I spent the last few years totally convinced I HATED kale chips. I wasn’t even sure I liked kale at all. It seemed to be just another fad vegetable – which personally turned me off before I had even tried it. Then one lovely day, I had my first kale caesar salad and haven’t looked back since. I think a large part of the reason I thought I didn’t like kale chips was that store-bought versions I had tried taste nothing like the ones I started making for myself.
