Annnnddd we’re back with a new Monday mouthful – and of course todays post for our July Blogging Challenge! Inspired by the fact that my entire family is home in Newfoundland without me for the first time in years (my sister is usually the one missing out!) I decided to pull out my container of summer savoury and make my own version of a traditional Sunday dinner for myself and C! These stuffed chicken breasts are just about the easiest thing to pull together and were the perfect comfort food for this homesick Newfie this weekend.
I’m not entirely sure what to call this. I think the original recipe was for a type of lasagna – and included meat. My version has evolved into a vegetarian stuffed pasta made with butternut squash, spinach, and feta. This is a fairly simple recipe to follow and keeps well in the freezer.
What a week. I’ve arrived safe and sound in Europe and just finished unpacking – better late than never! I had planned on sharing with you all a mouthful from the family supper I was supposed to cook yesterday… However, since I only ended up arriving this morning, my lovely Sunday dinner did not happen. So here is one of the recipes that has been turning around in my head for the last month, these delicious and easy pork tacos.

These crispy baked chicken wings will change your life. And writing this without being dramatic is hard. The best part about these is that they are baked, not fried, but (because magic) still come out of the oven crispy and delicious. Since the first time I made these C has threatened to enroll me in Chicken Wings Anonymous on more than one occasion. I believe his exact words have been “Babe. If you eat another chicken wing you will turn into a chicken wing”. (My response? “Then I would become a cannibal” I may have to look into CWA…)
